Product Description

Limoux is located at the crossroad of several climates (the Mediterranean climate is by incoming ocean breezes from the Atlantic), benefiting from their great influence to transform the grapes into amazing wines. The soil is mostly made of clay and limestone thanks to the erosion of the Pyrenees mountains. Although, the vineyards are mostly planted on hills (from 100 to 450 meters above sea level) as the Limoux area is located at the foothills of the mountains.

This premium Cuvée has been sourced from a family-owned estate, specialized in the elaboration of Sparkling wines in Limoux. Forerunner in the regional anchoring and the revival of the traditions, the estate distinguishes itself by a unique style, seeking the perfect balance between the freshness coming from altitude vineyard and the purity of its fruit aromas thanks to Mediterranean influences.

WINEMAKING
The method is traditional: exclusively handpicked harvest and direct pressing of the grapes. The first fermentation occurs in stainless steel vats, with the assemblage of base wines from a single vintage. The Pinot Noir is vinified both in Blanc de Noir & in Red. Aging on lattes at least 24 months.

Alcoholic Content: 11.5%
Conservation: Store away from light and heat, bottle laid flat.

WINE AND FOOD PAIRING
Serve chilled (7-8°C/45-47°F), as an aperitif for any kind of celebration, or with Asian food like sushi or pad Thai.

WINEMAKER'S NOTE
Bright salmon pink color. Appealing and complex, blending summer red fruits and fresh flowers. Long lasting, with delicate notes of ripe citrus and a hint of wild strawberries.
