- A blend of batches 4 and 5 blanco straight from the still. Batch 5 featured a change in production, opting to forgo chill filtration leading to brighter citrus notes and an elongated finish. The boost of citrus balances quite nicely with the cooked agave that's been present in all batches.

• Cooking method: Autoclave oven, 12 hours cooking and 36-40 hours cooling inside the sealed oven.
• Milling: Traditional sugar cane mills
• Water Source: Amatitan's water tables (deep well)
• Fermentation: Spontaneous fermentation generated by wild yeast from Amatitán Valley in open stainlees steel tanks.
• Distillation: Double horizontal distillation in stainless steel stills with a copper head.
