Be part of the select group to whom this product will be available. Be part of the old tradition of creating Canalla Rebelde. This Mezcal is produced in small batches with a maximum of 4000 bottles per batch. Every batch has hand-picked agaves at their perfect age and condition to produce the best mezcal. The agaves are produced locally in Santiago Matatlan, the best land to produce agaves, according to our Maestro Mezcalero. The cooking process has been perfected over more than 50 years of experience by the Maestro Mezcalero. The agaves are cooked in the best possible conditions, resulting in Mezcal with the best flavors that agave and wood can provide while cooking. No additives or chemicals are added during fermentation, and no water is added after destilation. All this gives Canalla Rebelde a unique and artisanal flavor, generated only by organic products and generations of Mezcal production experience.

To manufacture all of our products, we use mature Agave (8 -10 years old) grown in hillsides with a long-term sunlight exposure, proper water drainage and nutrients-low soil, these conditions facilitate longer roots and a healthier plant. The agave plant care excludes the use of artificial chemical fertilizers, pesticides and herbicides.

All of our products are patiently, dedicatedly and carefully elaborated by our master mezcal distiller, he overviews each and every step of the mezcal manufacturing process.

• Cooked in cone shaped stonework oven by “mezquite” wood combustion for 5-8 days depending on weather conditions.
• Grinded in millstone pulled by horse.
• Fermentation with natural yeasts (no additives) for 3-5 days in classical open fermenter wooden vats.
• Double distillation in copper alembics.
• Maturation in Glass Bottle.
