Viticulture Notes
We selected the majority of the grapes for Apothic Dark from Lodi in California’s Delta region. California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors.
Winemaking Notes
We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit, then we fermented the varieties between 88° to 90°F. The blend, primarily Petite Sirah and Teroldego with other dark-skinned varieties in support, was crafted to showcase a silky mouthfeel with hints of dark chocolate and spice.
